In 2013 Wayde Jester set out to open a casual dining restaurant with farm-to-table fare in Boulder, Colorado. Surprisingly, even in a town like Boulder this didn’t already exist. Now, Zeal – Food for Enthusiast has a food truck, a food cart, their own farm, a loyal band of Enthusiasts, and by the end of 2017 a second restaurant. The founder tells their story of obstacles, setbacks and successes.
